What is it about?

We used carrot residue [leftover after juice extraction] to prepare cookies and found that product was tasty with good colour. It could be stored and was a good source of carotenoids. Carotenoids are well known antioxidant pigments with multiple health benefits. This is specially useful for children to promote carrot consumption.

Why is it important?

Since cookies are basically sugar and fat rich product, an attempt was made to make them healthier by adding a vegetable source, carrot. Moreover, this also utilized industrial waster product, carrot residue left after juice extraction which is a rich source of total and Beta carotene.

Perspectives

Eating healthy and eating right is important for health. At the same time optimum use of all resources with minimum wastage is also required to save earth. This research attempts to do all this, and promote healthy eating in children with unique concept of utilizing carrot residue from industry in product formulation.
