What is it about?

The chapter deals with the origin, processing methods, nutrient values and food and nonfood uses of bay leaves. The antioxindant and antimicrobial activity of this herb and value addition and pharmocological importance was also discussed based on recent publications.

Why is it important?

Bay leaf has a high antimicrobial activity, however its activity was not well described. Therefore the researchers may inspired from this chapter for development of other potential applications with bay leaves, bay flower and their essential oils.

Perspectives

This chapter is the first published chapter of the author Hulya Cakmak, therefore she had paid extra attention for creating a perfect structure. We had focused on mostly food based applications, however the literature has overloaded with the medical applications together with as an alternative medicine potential.
