What is it about?

This publication deals with the development of Lactobacillus strain producing lactic acid at acidic pH. The strain was developed using protoplast fusion between Lactobacillus delbrueckii and Acetobacter pasteurianus. The developed strain produced more lactic acid at acidic pH compared to parent.

Why is it important?

It is important because the lactic acid production at acidic pH (4.0) avoids the requirement of neutralizing agent. This would ease the process of lactic acid recovery from the broth.
