What is it about?

Ohmic heating is often regarded as a technique that could provide value-added and shelf-stable foods. However, very few papers deal with the costs of ohmic treatment. In this paper, we compare two products with identical quality levels, and calculate the Target-Cost of the ohmic treatment and aseptic packaging of a vegetable soup. This Target-Cost is equal to 1.42306 €/kg, (65.9% of the total costs of the ohmic product).

Why is it important?

The paper is important because it deals with the costs of Ohmic Heating. This technology, in fact, is often regarded as very effective in delivering shelf-stable foods, but very few papers analyse the costs of Ohmic Heating. That's what we did, and came up with the target-cost of Ohmic Heating and aseptic packaging of a vegetable soup in our case study.
