Why is it important?
The classical HACCP worksheet is very hard to develope and implement in small food companies. A shortened form of HACCP documentation may significantly reduce the HACCP documentation (i.e. HACCP plan) what may facilitate implementation of the HACCP principles in small food businesses.
Perspectives
I hope this publication can help to improve food safety especially in small food companies. Also I hope that my proposal initiate the real searching for simplification of the HACCP documentation.
