Invertases convert the non reducing sugar, Sucrose to equimolar concentrations of glucose and fructose and this communication describes the properties of an enzyme from a thermophilic source

Generally invertases are constitutive but in this case we found, it was strictly inducible, but quite unstable even though it is isolated from a thermophilc fungus
