What is it about?
In the present study, we explained extraction of sugar from Deglet Nour, a kind of Algerian date (Phoenix dactylifera L.) which is native to Algeria and contains high quantity of carbohydrates.

Why is it important?
Sugar is not produced in Algeria. The country spends millions of dollars annually to import sugar.
Perspectives
The sucrose contents in refined sugar extracted from cane, beet and dates raw sugar were compared and suggested that the dates sugar can be substituted to cane and beet sugar
