What is it about?
We used to monitor gastric and duodenal motility in healthy subjects using rapid MRI technique, and revealed that liquid meal containing glutamate, Umami taste substance accelerates gastric emptying accompanied by enhancement of duodenal motility.

This observation implies 'the appetite of the gut': Namely, glutamate, Umami substance can act as appetizer in the gut as well as the mouth.
Perspectives
This work indicates that rapid MRI is useful to assess the effects and efficacy of functional food.
