This article explores the different challenges and opportunities that exist in Latin America to mass-produce edible insects and make them mainstream. The analysis is drawn using the four levels of the systemic competitiveness approach: micro, meso, macro and meta.

Why is it important?

It is important for researchers and entrepreneurs in Latin America working in the field of edible insects for human consumption to create adequate strategies to bring edible insects to the tables of latin households.

Perspectives

As a Latin American researcher, food engineer, and business developer, I see great opportunities for edible insects in our region and I am convinced that by exploring the different variables that can affect the success of this emergent industry, we can come up with innovative ideas to make it successful.
